Ingredients

  • 8 eggs
  • 1 teaspoon olive oil
  • 2 teaspoons white balsamic vinegar
  • 1 tablespoon pepitas
  • 150 grams cherry tomatoes, halved
  • 1 tablespoon basil, chopped
  • 1 tablespoon chives, chopped
  • 1 zucchini, grated
  • 2 carrots, grated
  • 1 cup boiled quinoa
  • 100 grams feta flavoured cottage cheese
  • pinch salt and pepper

Instructions

  1. Preheat oven 200* Grease a slice tin with oil & line with baking paper. Whisk eggs & cottage cheese in large bowl. Add quinoa, carrot, zucchini & herbs. Season with salt & pepper. Pour into tin bake for 25 -30 mins until golden & just set. Mix remaining ingredients together & spread over slice. Serves 4
  2. Whisk eggs and cottage cheese together. Add quinoa, zucchini, chives and basil and season. Pour into tin & level the surface. Bake for 25 - 30 mins.
  3. Just before serving make salsa, with cherry tomatoes, pepitas, vinegar and oil. Serve with cooked slice.
